Bruschetta
Bruschetta is a classic Italian appetizer that consists of grilled bread rubbed with garlic and topped with olive oil, salt, and often fresh tomatoes, basil, and other ingredients. Here’s a simple recipe to make traditional tomato bruschetta:
Ingredients
- 4-6 ripe tomatoes
- 1-2 cloves of garlic
- 6-8 leaves Fresh basil leaves
- 3-4 tbsp Extra virgin olive oil
- 1-2 tbsp Salt and freshly ground black pepper to taste
- 1 baguette or similar Italian bread
- Optional: Fresh mozzarella cheese
Instructions
- Wash the tomatoes and remove the cores. Dice the tomatoes into small pieces and place them in a large bowl.
- Finely chop the garlic and add it to the tomatoes. Chop the basil leaves and add them to the bowl. Drizzle the olive oil over the tomato mixture. If using, add a splash of balsamic vinegar for extra flavour. Season with salt and pepper to taste. Mix everything together and let it sit for about 15-20 minutes to allow the flavours to meld.
- Preheat your oven to 230°C (450°F). Slice the baguette diagonally into pieces about 1 cm thick. Place the bread slices on a baking sheet and brush them lightly with olive oil. Toast the bread in the oven until it’s golden brown, about 5-10 minutes. Keep an eye on it to prevent burning.
- Once the bread is toasted, you can rub a clove of garlic over the top of each slice for extra garlic flavour if desired. Spoon the tomato mixture generously over each slice of bread. If you’re using mozzarella, you can add small pieces on top of the tomato mixture.
- Arrange the bruschetta on a serving platter. Drizzle a little more olive oil over the top if desired.
