BBQ Steak Skewers

- 1.5 lbs 700g steak (sirloin, ribeye, or flank work well)
- 2 tbsp olive oil
- 3 garlic cloves minced
- 1 tbsp fresh rosemary finely chopped
- 1 tbsp fresh thyme finely chopped
- 1 tbsp fresh parsley finely chopped
- 1 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp salt
- 1 lemon zest and juice
- Wooden or metal skewers
Prepare the Steak:Cut the steak into 1-inch cubes. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Make the Marinade:In a bowl, mix olive oil, minced garlic, rosemary, thyme, parsley, smoked paprika, black pepper, salt, lemon zest, and lemon juice. Marinate the Steak:Add the steak cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavour). Preheat the Grill:Preheat your BBQ or grill to medium-high heat (about 400°F/200°C). Grill the Skewers:Place the skewers on the grill and cook for 3-4 minutes per side (for medium-rare), or until desired doneness. Avoid overcooking to keep the steak tender. Serve:Remove the skewers from the grill and let them rest for 2-3 minutes. Garnish with extra fresh herbs and a squeeze of lemon juice if desired.
