Berry Mascarpone Layer Cake
Ingredients
For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup unsalted butter softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup whole milk
For the Mascarpone Filling:
- 16 oz mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
For the Berry Topping:
- 2 cups mixed berries strawberries, blueberries, raspberries, blackberries
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
Instructions
- Prepare the Cake:Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the centre comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
- Prepare the Mascarpone Filling:In a large bowl, beat the mascarpone cheese until smooth. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold the whipped cream into the mascarpone cheese until well combined.
- Prepare the Berry Topping:In a medium bowl, combine the mixed berries, sugar, and lemon juice. Let it sit for about 15 minutes to allow the berries to release their juices.
- Assemble the Cake:Place one cake layer on a serving plate. Spread a generous amount of the mascarpone filling over the top. Add a layer of the berry mixture on top of the mascarpone filling. Place the second cake layer on top. Spread the remaining mascarpone filling over the top and sides of the cake. Decorate the top of the cake with the remaining berry mixture.
- Serve:Chill the cake in the refrigerator for at least an hour before serving to allow the flavours to meld together.
